Special Equipment: 8-inch square baking dish
In a large bowl, mix together cream, sweetened condensed milk, and vanilla extract. Use a hand mixer to beat until the mixture doubles in volume, about 4 minutes.
Spread a thin layer (scant 2 cups) of the cream in the bottom of the 8-inch square baking dish. Top with 1/2 cup graham cracker crumbs and a third of the mangoes. Repeat the layers (cream, crumbs, mangoes) two more times to create 9 total layers, finishing with mango on top. Cover and chill for at least 8 hours (or overnight) before slicing and serving.
