Mermaid Ice Cream

This vibrant, whimsical frozen dessert is surprisingly easy to make, requiring just 20 minutes of hands-on prep time and yielding 6 servings. The total time includes 8 hours of freezing, so plan ahead for a sweet treat that’s worth the wait.

Ingredients

Heavy cream

Powdered sugar

Vanilla extract

Sweetened condensed milk

Neon blue food coloring

Neon purple food coloring

Neon pink food coloring

Assorted sprinkles

Directions

Start by chilling a 9-inch loaf pan in the freezer—this helps the ice cream set faster.

In the bowl of an electric mixer fitted with a whisk attachment, combine heavy cream, powdered sugar, and vanilla extract. Whip on high until stiff peaks form.

Gently fold in sweetened condensed milk using a rubber spatula, being careful not to deflate the whipped cream.

Divide the mixture evenly among 3 bowls. Add neon blue food coloring to one bowl, neon purple to another, and neon pink to the third. Stir each until the color is evenly distributed.

Layer the colored ice cream bases into the chilled pan, spooning a few dollops of each color at a time. Don’t worry about being precise—imperfect layers add to the fun, mermaid-inspired look!

Once all the mixture is in the pan, use a skewer or butter knife to swirl the colors slightly (avoid over-mixing, as this can turn the ice cream muddy).

Sprinkle a handful of assorted sprinkles over the top, then cover lightly with plastic wrap. Freeze overnight until firm.

When ready to serve, scoop the ice cream into individual glasses and top with extra sprinkles for a playful finish.

The result is a creamy, colorful treat that’s sure to delight both kids and adults—no fancy techniques required!
