Asian Grilled Salmon

Ingredients
1 side fresh salmon (boned, skin on; about 3 pounds)
For the marinade: Mustard, soy sauce, olive oil, garlic
Directions
Preheat your grill by lighting charcoal briquettes, then brush the grilling rack with oil to prevent sticking.
While the grill heats, place the salmon skin-side down on a cutting board and cut it crosswise into 4 equal pieces.
Whisk together mustard, soy sauce, olive oil, and garlic in a small bowl to make the marinade. Drizzle half of the mixture over the salmon and let it sit for 10 minutes.
Place the salmon skin-side down on the hot grill (discard the marinade it was sitting in). Grill for 4–5 minutes, then carefully flip with a wide spatula and cook for another 4–5 minutes. The center will be slightly raw but will continue cooking as it rests.
Transfer the salmon to a flat plate (skin-side down) and spoon the reserved marinade on top. Let it rest for 10 minutes, then remove the skin. Serve warm, at room temperature, or chilled.
