Whisk together lime zest, lime juice, chipotle, honey, and olive oil in a medium bowl. Add tomatoes, onion, and cilantro, then mix until combined. Season with salt and pepper to taste.

Heat a grill to high. Brush lobster flesh with canola oil and season with salt and pepper to taste. Place on the grill, flesh side down, and cook until slightly charred and just done, about 5 minutes. Remove the meat from the shell and coarsely chop. Transfer the chopped lobster to a bowl, add green onions, and mix to combine.
Lay tortillas flat and evenly spread cheese over the surface. Add a few heaping tablespoons of lobster to the center of each tortilla. Fold the tortillas over, brush the tops with oil, and grill oil-side down until slightly charred, about 1 minute. Brush the other side with oil, flip, and continue grilling until slightly charred and the cheese just melts. Arrange the tacos on a serving platter and garnish with cilantro.
