Combine all ingredients (including the vanilla bean and its pulp) in a large saucepan over medium heat. Attach a candy or frying thermometer to the inside of the pan. Stir occasionally until the mixture reaches 170°F, then remove from heat and let cool slightly. Remove the vanilla bean hull, pour the mixture into a lidded container, and refrigerate overnight to mellow flavors and texture.

Freeze the mixture in an ice cream maker according to the manufacturer’s instructions. The mixture won’t freeze hard in the machine—look for a soft-serve consistency and a 50-75% increase in volume. Transfer the mixture back to a lidded container and freeze for at least 1 hour to harden before serving.
Note: If you don’t have a thermometer, bring the mixture just barely to a simmer. As soon as you see a bubble hit the surface, remove it from the heat—do not let it boil.
